Am I able to remote control a computer during the imaging process?

Yes!

VNC is the tool inside of smartImager that will allow you to remote control a computer that you are actively imaging so you can watch the process from your desk.

In the smartImager console, if you go to Console | Bootstrap Settings, you'll find a "VNC" toggle.  Make sure that is turned on (Enable VNC During Imaging Process).  If it was off, you will need to turn it on, click Save, and then run a Publish. 

It will remount WinPE and synchronize with WDS for you.  If you use any USB sticks, you'll need to remake them as the VNC utility is baked into the boot.wim (WinPE environment).  A good rule of thumb is: if you make any changes on the Bootstrap Settings page, you need to remake any USB sticks - as all settings on that page effect WinPE.
